Eggplant Caponata

 

Ingredients

2 large eggplants diced in 3/4 in. squares
1 small onion diced
1 tsp garlic
1/4 cup olive oil
1/2 lb. mushrooms
1/4 cup raisins
1 small can plum tomatoes
1 tbs. capers
1 small can roasted red peppers
1 tbs. oregano
salt and pepper to taste
olives optional

 

Place diced eggplan,t mushrooms, onions, and olive oil in a bowl. Toss all together, put on a 1/2 sheet pan and roast in a 400 degree oven for approximately 20 minutes. Remove from oven. Add remaining ingredients. Let sit approximately 20 minutes. Can be used on fish, chicken, beef or pasta. Best if made 1 day ahead.
